Here are some of our favorite vegetarian lunch choices off the organic Nourish menu.

The Nourish Bowl. Our namesake Wellness Bowl begins with a bed of brown rice (or substitute organic local greens for a grain-free option). We add a generous dollop of bright pink beet hummus, sliced avocado, shredded carrots, tangy fermented beets, local sprouts, and hemp seeds for crunch. Out of all our house-made dressings, we recommend Cashew-Ginger with the Nourish bowl — but the choice is yours. Try it with Buddha Blend, Miso Tahini, Maple-Beet-Balsamic, or simply fresh lemon juice and extra virgin olive oil.

Cheesy-Avo Toast and Miso Tahini Broth. Try a thick slice of sprouted sourdough toast from Tart bakery, or gluten-free bread made at Woodstar Cafe. We spread it with our house-fermented cashew “cheese” (vegan and gluten free), and a drizzle of olive oil. We love any of our Hearty Toasts with a cup of warming Miso Tahini Broth on the side, to promote a healthy gut and balanced digestion!

Nori Roll and a Smoothie. A customer favorite. For the Nori Roll, we wrap seaweed (nori) around avocado, purple cabbage, carrots, and sprouts, and serve it with our irresistible Miso Tahini dipping sauce. If you’re hungry for more, pair this lighter lunch choice with a creamy smoothie. One of our favorite nutrient-packed signature smoothies is the Beetiful: beet juice, blueberry, mango, banana, lemon, almond butter, and coconut milk!
