Enjoy the Benefits of Local Miso in Our Miso Tahini Broth and Dressing

Two of the staples on the Nourish Wellness Cafe menu are Miso Tahini broth and dressing. Miso has been manufactured in Japan for thousands of years. We are lucky to be able to source amazing miso, traditionally prepared, from our neighbors in Conway at South River Miso. The fermentation process imbues miso with beneficial bacteria which promote a healthy gut. We combine this flavorful miso with rich organic tahini (a nut-butter-like paste made from sesame seeds) to make our warming broth and dressing. Why Eat Tahini and Miso?

Tahini and miso are delicious, but that isn’t the only reason to consume these ingredients. One tablespoon of tahini provides over 10% of your daily needs for Thiamine, Vitamin B6, Manganese, and Phosphorous, as well as 3 grams of protein and 1 gram of fiber. About half the fat in tahini comes from monounsaturated fatty acids, which have been linked to a decreased risk of chronic disease.

Miso, meanwhile, is a complete protein — it contains all nine essential amino acids. Additionally, miso restores beneficial bacteria to the intestines, and stimulates the secretion of digestive fluids. Both tahini and miso are high in antioxidants, which means they fight free radicals and strengthen immunity.

All the items described below are vegan and gluten free!

Our Nori Roll is organic avocado, purple cabbage, carrots, and sprouts wrapped in nori (seaweed). We serve it with Miso Tahini dipping sauce for a creamy hit of umami deliciousness.

For the Winter Warmer, we ladle Miso Tahini Wellness Broth over brown rice, massaged kale, carrots, cabbage and cashews, and top with kimchi or sauerkraut for an extra dose of gut-health-boosting bacteria!

You can also enjoy a simple bowl of Wellness Broth on its own. Did you know that, in Japan, it is traditional to begin the day with a bowl of miso soup? The warm soup is considered to stimulate digestion and energize the body. Try it yourself for breakfast, as a light snack, or alongside any of our dishes to promote good digestion!
